The Best Black Bean Chili Recipe Ever!

This Black Bean Chili recipe is healthy, scrumptious and can easily be adjusted to suit any dietary or flavor preferences–and still get wows from your family and friends. What more could you ask from a chili recipe?
Three different types of chopped peppers. plus corn and chopped chilies, give this dish beautiful color and texture. It’s good with or without meat, and freezes well, so it’s a great recipe to have on hand.
The ingredient list may seem a little long, but since it’s mainly opening a few cans and chopping a few veggies, this chili actually comes together in a snap. It’s easy to adjust the ingredients to suit your family, too. If you don’t like an ingredient, simply omit it or substitute something you do like. Don’t like peppers? Leave them out. Don’t like chopped chilies? Omit them, or substitute sliced fresh jalapeños instead. Try making it with chopped butternut squash or chopped carrots if you feel the urge (although you’ll need to increase the cooking time a bit to soften these sturdy veggies.) Add meat, don’t add meat — doesn’t matter. This chili comes out great no matter how you choose to make it.

Sebrina’s Black Bean Chili
3-15 oz cans Wild Oats Marketplace Organic Black Beans (rinse and drain 2 cans, leave 1 can undrained)
2 tsp –Wild Oats Organic Extra Virgin Olive Oil
1-large sweet onion, chopped
2-tsp chopped garlic
1/2- a large green pepper, chopped
1/2-a large red pepper, chopped
1/2-a large yellow pepper, chopped,
1-cup Wild Oats Marketplace Organic Chicken Broth or Wild Oats Marketplace Organic Reduced Sodium Chicken Broth
1-15 oz can Wild Oats Marketplace Organic Petite Diced Tomatoes
1-can diced tomatoes with green chilies, such as RoTel, spicy if you like or mild if you don’t!
1-15 oz Wild Oats Marketplace Organic Whole Kernel Corn, drained
1-4 oz can chopped green chilies, such as Old El Paso Chopped Green Chilies, drained
1-pkg of your favorite chili seasoning, such as McCormick Original Chili Seasoning Mix, spicy or mild or whatever you like
1- generous tablespoon Wild Oats Marketplace Organic Chili Powder
1-tsp Wild Oats Marketplace Organic Cumin
1/4 tsp. salt or to taste
OPTIONAL: 1-lb lean hamburger meat (Or substitute 1- pkg meatless crumbles, such as Morningstar Farms Meal Starters Grillers Crumbles, or 2 cups cooked, shredded chicken)
Toppings: Shredded cheese, sour cream, lime wedges, sliced jalapenos, fresh cilantro
Serve with tortilla chips for dipping
In a large dutch oven, warm olive oil over medium heat. If using hamburger meat, sauté until cooked through, using a spoon to break up pieces as they cook. Drain if desired. (Skip this step and sauté onion and garlic in warm olive oil if omitting meat.)
Add garlic and onion to cooked hamburger meat and saute until beginning to soften. Add peppers, black beans, corn, chopped chilies, chicken broth and tomatoes, stirring to combine. Mix all seasonings together in a small bowl and add to the pot, stirring well to combine. If using meatless crumbles or shredded chicken, add them now and stir to combine. Bring to a boil. Reduce heat to simmer. Cover and continue cooking for about 1 hour. Enjoy!
